Three Best DIY Vegan Protein Bars

Since I struggle to get enough protein in my diet, especially when I’m on the go, I have tried so many protein bars – and most of them have been huge disappointments.  So one day I decided to stop spending £3 on protein bars I wasn’t going to enjoy, and instead tried making my own.  These are 3 of the best DIY vegan protein bars you can also make at home.

 

Chocolate Chip Cookie Bars:
These are so good and only take 10 minutes to make, so your meal prep time isn’t going to be dramatically increased. You will need:

2 ½ cups oat flour 

½ cup vegan protein powder 

½ cup vegan chocolate chips

½ cup nut butter (melt this slightly in the microwave to make it easier to mix with the dry ingredients)

½ cup maple syrup

1 tsp dairy free milk (I use oat milk for extra sweetness)

 

All you need to do is combine the dry ingredients with the wet ingredients until you have a thick batter.  Then transfer the mix to a baking dish and flatten, then refrigerate for at least 30 minutes.

Peanut Butter Bars:

These are so good that they might be my favourite vegan protein bars.  You will need:

2 scoops vegan protein powder (I find vanilla flavoured protein tastes best)

½ cup oat flour 

½ cup crunchy peanut butter

½ cup dairy free milk (I like to use almost milk for extra nuttiness)

100g dark chocolate (melt in the microwave)

2/3 cup peanuts (chopped up)

 

To make the batter for these bars you basically need to do the same as the last recipe; combine the wet and dry ingredients into a bowl and press the batter into a baking dish.  The key difference when making these vegan protein bars is to mix together the melted chocolate and peanuts, and then drizzle over the bars before you refrigerate.

Oat Squares:

These are a great pre- or post- workout snack, and will give you tons of energy.  You will need:

½ cup dairy free milk (I use oat milk)

1 cup nut butter (I like to use cashew butter)

1 cup vegan protein powder

2 cups oats 

¼ cup chia seeds

¼ cup flax seeds

 

To make these squares, mix together the oats, flax seeds, chia seeds and protein powder. Then combine the milk and nut butter in a pan until melted, and fold in the dry ingredients slowly.  Press the batter into a baking dish and refrigerate for at least 30 minutes.
